Chawanmushi Recipe

Ingredients:

250 ml water
35 grams hondashi powder (dashinomoto) 
4 pieces whole Eggs
40 ml Japanese soy sauce
30 ml sake
20 ml mirin
15 grams salt
60 grams edamame
2 pieces dry shiitake mushroom
60 grams shrimps, blanched
60 grams chicken, blanched and cubed
2 pieces crab stick, cut
60 grams Baguio beans or sitcharo, blanched

Instructions:
  1. Boil water with dashinomoto. Cool
  2. Beat eggs in a bowl then add the cooled dashi stock.
  3. Add mirin, soy sauce and salt. Strain.
  4. In small chawan bowls or custard cups, arrange the edamame, mushroom, shrimp, chicken and crab stick.
  5. Pour in the egg mixture. Cover.
  6. Steam for 10 minutes or until lightly set. Do not overcook. Top with blanched Baguio beans
    before serving.
