Sukiyaki Recipe

200 grams thinly sliced Sukiyaki beef
40 grams beef fat
140 grams Baguio pechay or Chinese cabbage
80 grams white onion, sliced into rounds
80 grams onion leeks, diagonally cut
2 pieces fresh shiitake mushroom
20 grams carrots
40 grams shimeji mushroom
40 grams momen tofu, cut or cubed
50 grams shirataki noodles or sotanghon, parboiled

80 ml Japanese soy sauce
50 ml sake
30 ml mirin
60 grams brown sugar
150 ml water
15 grams hondashi powder

How to cook Sukiyaki
Grease skillet with beef fat

  1. Boil together all the ingredients for the sauce.
  2. Heat a sukiyaki pan or any skillet. Grease well with beef fat.
  3. Add a few slices of beef and pan fry for a few minutes until they change in color. Push to
    one side of the pan.
  4. Add a little of the rest of the ingredients except for the tofu and shirataki since they cook
fast. Pour in enough sauce to cook the ingredients to your desired doneness.
  5. Add tofu and noodles.
  6. Give each guest a small bowl with a beaten egg. As the sukiyaki ingredients cook, take
some of each kind, dip in the beaten egg and eat.
