Sen Lek Thai Noodles

Foodamn Philippines visits Cartimar pet shop on a monthly basis. After a day of stroll and animal supply shopping, the center has allotted an al fresco dining with variety of food vendors usually in small spaces / stalls. One food stall that stand out from among the Filipino dishes was the Sen Lek Thai Noodles, although we love Thai foods, but every time we were in Cartimar, the weather seems not to jive with Sen Lek (noodle soup) appetite. Because of humidity in the area, we end up with something refreshing and the likes of pizza, shawarma, takoyaki.

kuai tiao sen lek
"noun. a flat wide rice noodle from Thailand, commonly used in Phat Thai dish (stir-fried rice noodles) and in noodle soups."
Since rainy season has come, I suddenly thought of pigging out sen lek thai noodles. We were craving for something hot and spicy.

Their bestseller was the Mixed Special Noodles (it's like Pinoy's Pare-Pares version of super mami) where everything is included from wanton, meatballs and beef. The stew has been flavores with Thai herbs, top with bean sprouts, spring onions and Thai-known condiments.

So I get trigger happy again (an overly used term) with the chili powder, Sen Lek Thai Noodle's version of this red chili pepper is absolutely authentic! Piece of advise to some, we noticed some people asking for soy sauce (toyo) to add flavor to sen lek. Please don't do that, it loses the unique Thai flavor and natural herbs of the stew. This isn't the typical bland noodles usually dish-dash with Aji-Ginisa!
